Easy Chicken Mushroom and Spinach and Tomatoes

Over the next month, I am scheduled to work long 12 hour days for six days a week. That doesn't give me a lot of time, especially with a very active 22 month old toddler waiting for me at home.
Thank goodness my older daughter is usually home in the evenings when her after school activities are done to help me out. But, I really could use a little help with dinner during these busy work days.
Last week, on my one day off, I set aside a little time in the evening to cook up some pre-made meals for the upcoming week. I had some baby spinach left over from the pumpkin lasagna that I had made so I needed to come up with something to use that up.
What I ended up creating is an easy one pot chicken spinach tomato dish that takes little time to prepare. And, I love that cleanup is pretty easy too.
I used chicken because I had some boneless breasts partially thawed in the refrigerator. There was also a can of diced tomato in my pantry and some fresh mushrooms in my refrigerator.
Since I had canned mushrooms in the pantry closet, I could have used those as well. With working long hours, the last thing I wanted to do was head to the grocery store.
Since the chicken was still a bit frozen, I cut it up so it would cook up faster. Then I added the tomato, spinach and mushrooms and cooked until the liquid was reduced a good amount.
This chicken spinach tomato dish turned out to be pretty tasty. I think if it were a planned meal, I would have served it on some cauliflower rice.
Although the dish can be served plain, I chose to sprinkle some grated parmesan cheese on top. I'm such a cheeseaholic that I tend to add cheese to just about everything I eat.
But, the parmesan really does up the flavor. I used the canned kind, but I like the shredded cheese better. I just didn't have any on hand in the refrigerator.
I'll be keeping this easy chicken spinach tomato recipe handy so I can cook it again. It's so simple that I'm going to be adding it to my regular meal rotation.
Next time, I'm going to experiment with adding in some herbs and spices. This was just a quick fix dinner on a busy night. When I have more time, I'd like to spice it up a bit.

Chicken with Spinach and Tomato
This chicken with spinach and tomato dish is simple to prepare and cooks up in one pot for those busy evening when you don't have a lot of time for dinner.

- 2 tablespoons olive oil
- 2½ pounds skinless boneless, chicken breast, cut into 1" pieces
- 2 cloves garlic minced
- Salt
- Ground black pepper
- 15 ounces canned diced tomatoes
- 7 ounces baby spinach more or less
- 8 ounces thinly sliced mushrooms
- grated parmesan cheese optional (Leave out for AIP)

Coat a large pot with olive oil and place over medium heat.

When the oil is hot, add the chicken and garlic. Season with salt and pepper.

When the chicken is no longer pink and the juices run clear, add the tomatoes, spinach, and mushrooms. Cook until the liquid is reduced by about half. Add seasoning if needed.

Sprinkle with cheese just before serving if desired.
